Ingredients:
- 1 pound of shrimp (be sure to remove the tail!)
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 tsp chili powder (for a bit more spice)
- Vegetable oil, for frying (or canola oil)
- **Tip- make sure the shrimp is fully coated in the mixture. Additionally, feel free to use 1 whole cup of flour instead of the 1/2 and 1/2 if you don't have cornstarch!
For the sauce:
- 1/4 cup mayonnaise
- 2 tablespoons Sriracha sauce (adjust according to your spice preference)
For garnish (optional):
- Sliced green onions
Instructions:
In a bowl, combine the all-purpose flour, cornstarch, salt, chili powder and black pepper...and mix it up well!
Dip each shrimp into the flour mixture, ensuring they are fully coated. Shake off any excess flour to be sure it doesn't burn in the pan.
Heat vegetable oil in a deep pan over medium-high heat. Be sure to wait until the oil begins to spatter before placing the shrimp in. (You can place a drop of water in the oil and watch to see if it spatters to test if it is ready)
Carefully drop the coated shrimp into the hot oil, a few at a time, and fry until they turn golden brown and crispy. This usually takes about 2-3 minutes per batch. Once cooked, transfer the shrimp to a paper towel-lined plate to drain excess oil.
In a separate bowl, combine the mayonnaise and Sriracha sauce. Mix well until all the ingredients are thoroughly combined.
Toss the fried shrimp in the prepared sauce, ensuring they are evenly coated.
Garnish with sliced green onions, if desired.
Serve the dynamite shrimp immediately while they're still hot and crispy!
